Ingredients
· 1 Bread loaf of your choice
· 2 large Avocados
· 2 cans Chickpeas
· 1 Lemon (squeezed)
· 2 Garlic Cloves
· 2 Tbls Tahini Paste
· 1 large Beetroot (boiled and peeled)
· 2 Tbls Olive Oil
· Salt & Pepper
· A handful of Crumbled Feta Cheese
· Radish Cress
Method
Slice the Bread loaf (toast if desired), and thinly slice the Avocados. Make the Beetroot Hummus: In a food processor mix the Chickpeas (drained), Lemon juice, Garlic, Tahini Paste, Beetroot, Olive Oil and a pinch Salt and Pepper. (Quantities can vary based on your taste preference)
Spread a generous amount of Beetroot Hummus on the Bread, add the Avocado slices fanned out, and top with crumbled Feta Cheese and Radish cress.
