Ingredients
· 150g Cherries, halved and pitted
· 125g Raspberries, halved
· 125g Strawberries, cut into slices
· 125g Blackberries, halved
· 125g Blueberries
· 125g Pomegranate seeds
· 5g Basil leaves, chiffonade
· 5 ml Yuzu juice, or Balsamic Vinegar
· 1 Teaspoon culinary grade Matcha Powder
· 200g Greek Yogurt (preferably honey flavored)
· Icing Sugar for dusting
Method
Using a bamboo whisk, whisk the fine Matcha Powder into the Greek Yogurt. Set aside. In a large bowl mix in all the Berries with the Basil chiffonade and the Yuzu (or Lemon Juice).
Serving suggestions: Serve family style in a big bowl, with optional dollops of matcha-Greek yogurt. Alternatively, using a silicone brush, smear the Matcha Green Yogurt onto the base of a plate, and pile the Berry salad on top. Dust with Icing Sugar if desired.
